Looking at my achievements, I've got 4/5 on both and haven't ever noticed any 5 star
Anyway I've tried for in game for over a year and I can't seem to get the last two.
Any ideas what I can do to get them?

The 4/5 means that the highest skit and mic spot that you have gotten is 4-stars; you only need to hit each one once to get the achievement.
As for how you get it, it is just a matter of having someone with high stats (POP for skits, MIC for mic spots) in a segment that favors their style and maybe adding a flavor card. It may take you a while for you to get all those things.
One is easier to hit first than the other. Arizona Chance in a Dramatic Promo is going to get you a 4-star skit easily. If you add Princess Starbright as a manager, that should get you there. For the mic spot, it is probably going to take having at least a Main Event wrestler. Getting a Bigmouth or a Showman with a high MIC and putting them in a Wrestler Brag with a +2 MIC manager is probably the most straightforward path.
